  • 28-ounce can tomatoes, diced
  • 15-ounce can kidney beans, strained and rinsed
  • 15-ounce can cannellini beans, strained and rinsed
  • 15-ounce can chickpeas, strained and rinsed
  • 1 large onion, diced
  • 1 large carrot, diced
  • 1 chopped florets from one head of cauliflower
  • 2 cups mushrooms, quartered
  • 3 garlic cloves, smashed and minced
  • 1/2 vegan dark chocolate bar, crushed into pieces (optional)
  • 8 ounces vegan BBQ Sauce
  • 4 ounces hatch chilis
  • 1/4 cup brown rice syrup
  • 3 tablespoons cumin
  • 2 tablespoons chili powder
  • 1 tablespoon kosher salt
  • 1 teaspoon dried granulated onion
  • 1 teaspoon black pepper
  • 1 teaspoon red chili pepper flakes
  • 3/4 teaspoon smoked paprika

How to Prepare Cauliflower-Vegetable Bean Chili [Vegan, Gluten-Free]

  1. In a large slow cooker or large, heavy-duty stove pot, add all ingredients.
