Transition Into Fall by Grilling These Delicious Summertime Foods

untitled-154

In late August, it feels like we’re all preparing ourselves for fall. Back-to-school season is beginning and coffee shops are starting to push our their seasonal, autumn treats. While the calendar is pointing us all toward cooler weather, the grocery stores and markets still seem to be jam-packed with the last of the bright, beautiful late summer produce we all love.

Whether you’re anxious for autumn to begin already, or you’re desperately clinging to the last few warm, summer days, right now is an ideal time to get experimenting in the kitchen! Use these last few weeks as an opportunity to grill up the last of your summer ingredients, and transform them into fall-appropriate dishes. Yes, you truly can have the best of both seasonal worlds!

We rooted through our Food Monster App and have found four recipes that feature summertime favorites such as avocados and peaches, but transform them into your new favorite early-autumn meals with a grill. Let us know what you think of them!

This recipe for Grilled Avocado With Roasted Tomatoes by Carri Pattison is creamy, cozy, and super bright and flavorful!

Grilled avocado with roasted tomatoes makes a great side dish or a quick, light meal. This easy-to-make recipe is raw and will leave you full without feeling fatigued. If you aren’t into grilling, simply roast the avocados along with the tomatoes.

Grilled Apple Pie With Vanilla-Coconut Whipped Cream by Barbara Musick: Blogger, That Was Vegan?

In this summer-friendly version, traditional apple pie filling is wrapped in spring rolls, grilled, then brushed with melted vegan butter and sprinkled with cinnamon and sugar. The only thing that could possibly make it better is the vanilla-infused whipped coconut cream perfect for dipping.

This Shaved Brussels Sprouts and Grilled Pear Pizza by Gabrielle St. Claire brings together fresh summer vibes with cozy autumn flavors.

This pizza is like the fall version of a salad pizza. Brussels sprouts, caramelized onions, Shiitake bacon, and vegan Parmesan on top of a crispy crust each play a supporting role of bringing together all dimensions of flavor and texture that make this pizza so perfect. The Shiitake bacon offers a savory taste, the onions a sweet and sour taste, the grilled pear a mild sweetness, and the shaved Brussels sprouts bring the entire pizza together.

This Grilled Peach, Red Onion, and Arugula Salad by Simple Green Suppers is the ultimate transitional feast.

This casual summertime supper salad features two delicious pairings which make it perfect for early autumn. First, there’s the kicky flavor contrast of sweet summer peaches with brightly acidic vine-ripened tomatoes. Second, there’s the fun textural juxtaposition of juicy tomatoes and crunchy grilled bread. The tomato-bread mix is a twist on an Italian Panzanella salad, only here it is used a bit more as a garnish for an arugula, peach, and grilled onion salad. A drizzle of balsamic vinegar, lime, and maple syrup brings together all the flavor points in this colorful mix. If you’ve never grilled peaches before, no worries — it’s much easier than it sounds and quite delicious. You can use nectarines if you like instead.
