Ingredients You Need for Thyme-Infused Hasselback Potatoes [Vegan, Gluten-Free]

  • 3 pounds Maris piper potatoes
  • Handful fresh thyme
  • 1 garlic clove crushed
  • 3 tablespoons olive oil
  • Salt & pepper

How to Prepare Thyme-Infused Hasselback Potatoes [Vegan, Gluten-Free]

  1. Preheat your oven at 390°F with your oven dish inside.
  2. To a pestle and mortar add the fresh thyme (pull the leaves away from the stalks) crushed garlic clove, 3 tablespoons olive oil, pinch of salt and pepper, and mix.
  3. Slice downwards on the potatoes, and use chopsticks or wooden spoons laid down to help create even depth and stops you from slicing all the way through the potato.
  4. Place the potatoes in the oven dish, then evenly spread the thyme oil over, making sure it gets deep inside the potatoes. Season with a pinch of salt and pepper and place in the oven for 45 minutes at 390°F.
  5. Season with a pinch of salt and pepper and a sprinkle of fresh thyme and serve.

Notes

You could always make these the day before Christmas and just reheat them by placing them back in the oven for 15-20 minutes before serving.
