Ingredients You Need for Thai-Inspired Mango Salad [Vegan]

For the Mango Salad:
  • 2 ripe mangos, diced into cubes
  • 1 cucumber, seeds removed, sliced into matchsticks
  • 1/4 red onion, diced small
  • 1 papaya, diced into cubes
  • 1/2 cup chopped cilantro
  • 1/2 cup chopped peanuts

For the Dressing:

  • 2 tablespoons tamari or soy sauce
  • 4 teaspoons vegan fish sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon maple syrup
  • 1/4 teaspoon chili flakes
  • 2 tablespoons lime juice

How to Prepare Thai-Inspired Mango Salad [Vegan]

  1. Make the dressing by whisking together all of the dressing ingredients and setting aside.
  2. Add all of the salad ingredients to a bowl, drizzle with the dressing, toss and serve.

Notes

  • If you like more spice, try using a finely minced red thai chili pepper instead of chili flakes in the dressing.
  • If peanuts aren’t your favourite, you can substitute with chopped cashews.
  • This salad would be delicious served as a side to your favourite protein.
