For the Mango Salad:
- 2 ripe mangos, diced into cubes
- 1 cucumber, seeds removed, sliced into matchsticks
- 1/4 red onion, diced small
- 1 papaya, diced into cubes
- 1/2 cup chopped cilantro
- 1/2 cup chopped peanuts
For the Dressing:
- 2 tablespoons tamari or soy sauce
- 4 teaspoons vegan fish sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice wine vinegar
- 1 tablespoon maple syrup
- 1/4 teaspoon chili flakes
- 2 tablespoons lime juice
How to Prepare Thai-Inspired Mango Salad [Vegan]
- Make the dressing by whisking together all of the dressing ingredients and setting aside.
- Add all of the salad ingredients to a bowl, drizzle with the dressing, toss and serve.
Notes
- If you like more spice, try using a finely minced red thai chili pepper instead of chili flakes in the dressing.
- If peanuts aren’t your favourite, you can substitute with chopped cashews.
- This salad would be delicious served as a side to your favourite protein.
