Ingredients You Need for Thai Green Curry Potato Casserole [Vegan]

  • 4 1/2 cups potatoes, cooked in the microwave for 6 minutes
  • 1 15-ounce can chickpeas
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 14-ounce can coconut milk
  • Indian spice mix: curry, turmeric, chili powder, ginger, salt, and pepper
  • 2 tablespoons green curry paste
  • 3 crushed pappadums (Indian crisp flatbread), for garnish

How to Prepare Thai Green Curry Potato Casserole [Vegan]

  1. Wash or peel the potatoes and cut them into cubes. Pre-cook for about 6 minutes in the microwave.
  2. In the meantime, prepare the bell pepper and onion. In a small bowl, mix together the spice mix and the drained chickpeas.
  3. Prepare the sauce by mixing the green curry paste and coconut milk. When the potatoes are done, transfer them to a casserole dish, and mix in the vegetables and the Tandoori chickpeas. Add sauce on top.
  4. Bake the casserole in the oven at 390°F for about 20 minutes. When done, cover with the crushed pappadums.
