Summer Squash and Tomatoes [Vegan]

  • 10 oz cherry tomatoes
  • 4 1/2 cups yellow squash
  • 1 small onion
  • garlic
  • 1 tablespoon oil
  • Italian spices
  • 1/2 lime juice


  1. Saute onion in oil and salt until soft.
  2. Add garlic and saute for a minute.
  3. Add veggies, spices and salt to taste.
  4. Cook til yellow squash is tender. Feel free to add a splash of water and a lid to the pot. Add spices and lime juice. ENJOY!
