You can use whatever fruit you like in this recipe – blueberries and also banana would work well.
Strawberry Pancakes [Vegan]
- 1 banana
- 1 cup oats
- 1/2 cup rice milk
- handful of fresh strawberries
- 1 teaspoon vanilla essence
- A little olive oil for frying
- Blend everything together until smooth (use blender, food processor or nutri ninja)
- Add a little extra flour if the batter is too thin – it should be like cake batter
- Fry on each side for about 2 minutes in a little olive oil
- Top with favourite toppings and enjoy!
