    Ingredients You Need for Springtime Asparagus [Vegan]

    For the Asparagus:

    • 1 cup quinoa
    • 2 cups water or vegetable stock
    • 1 cup cooked garbanzo beans
    • 1 cup asparagus ribbons
    • 1 tablespoon lemon zest
    • 1/4 cup chiffonade of basil
    • 1/4 cup chopped pistachios

    For the Dressing:

    • 1 cup mint leaves
    • 1/2 cup water
    • 1 cup tahini
    • 1/4 cup lime juice
    • 1 tablespoon maple syrup
    • Salt to taste

    How to Prepare Springtime Asparagus [Vegan]

    1. Heat a small saucepan over medium-high heat.
    2. Add quinoa and toast for 3-4 minutes.
    3. Add water or stock, 1/4 teaspoon salt and stir.
    4. Bring to a boil, cover and cook for 15 minutes. Fluff with a fork and set aside.
    5. To make dressing, put tahini, lime juice, maple syrup, mint leaves into a blender and blend until smooth. Check for seasoning.
    6. Use vegetable peeler to slice the stalks of fresh asparagus lengthwise into very thin strips.
    7. Toss quinoa and thin ribbons of raw asparagus together. Add half of the dressing to coat.
    8. Add more if needed.
    9. Top with pistachios
    10. Season with salt.
