Ingredients You Need for Slow Cooker Stuffed Apples With Figs [Vegan]

For the Apples:

  • 5 Granny Smith apples with the center core hollowed out

For the Stuffing:

  • 5 dried figs (about a 1/4 cup)
  • 1/3 cup of maple sugar or coconut sugar
  • 1 teaspoon chopped crystallized dried ginger (crystallize your own with coconut sugar in the dehydrator! yum!) or 1/2 teaspoon fresh
  • 1/4 cup chopped pecans
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1 teaspoon lemon zest
  • 1/2 teaspoon orange zest (or another teaspoon lemon zest)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon coconut oil

For the Water Bath:

  • 1/2 cup water
  • 1/2 teaspoon cinnamon
  • Lemon juice, leftover from the lemon

How to Prepare Slow Cooker Stuffed Apples With Figs [Vegan]

  1. Mix the stuffing ingredients together
  2. Remove the center of each apple
  3. Stuff the apples with stuffing
  4. Squeeze the rest of the lemon on top of the apples
  5. Put the water in the slow cooker (if a little gets on the apples, that's alright)
  6. Put the apples in a slow cooker for 1.5 hours on high
  7. I tried to stop eating after 2 apples...Good luck!
