Ingredients You Need for Simple Crab Cakes [Vegan]

  • 1 can of drained and cut jackfruit
  • 1 can of drained and smashed chickpeas
  • 1/4 yellow onion
  • 3 tablespoons vegan mayo
  • 1/4 cup vegan bread crumbs
  • 2 teaspoon old bay
  • 1/2 teaspoon dill weed
  • 1 teaspoon onion powder
  • black pepper
  • few little squeezes of lemon
  • olive oil for the pan
  • parsley and green onions to garnish

How to Prepare Simple Crab Cakes [Vegan]

  1. start by draining your chickpeas and mash them up in a medium sized bowl

  2. drain the jackfruit and cut the hard ends off. Then, shred the pieces apart by hand and throw them in with your smashed chickpeas (they will look like little pieces of meat its freaky)

  3. Mix them together and take 1/2 of that jackfruit and chickpea combo in a food processor

  4. along with 1/2 of our "crab" mix in the food processor, add it your spices, mayo, lemon, and bread crumbs and mix until all the ingredients are JUST mixed well (we don't want to over mix them)

  5. put a non-stick oiled pan on medium-high heat

  6. take that 1/2 mix and add it back into our unmixed 1/2

  7. finely chop our onion and throw it into the crab mix (mix all ingredients here well)

  8. shape the crab mix into palm sized balls and lightly mash down into little patties and add to our oiled pan

  9. flip occasionally to make sure each sides are browning and after a few minutes they should be cooked through (I tell by the color or each side of the patties- the more brown the more cooked)
