  • 1 cup pecans
  • 1/2 cup unsweetened shredded coconut (plus 1/3 cup for rolling)
  • 1 tablespoon maple syrup
  • 1 teaspoon sea salt

How to Prepare Salted Maple Pecan Pie Energy Balls [Vegan, Gluten-Free, Paleo]

  1. Place all of the dates, pecans, 1/2 cup shredded coconut, maple syrup, and salt in a food processor. Process for 1-2 minutes until mixture comes together.
  2. Place extra coconut in a bowl and set aside.
  3. Roll the mixture into 12 balls. Roll balls in coconut and refrigerate 30 minutes before serving.
