Ingredients

For the Roasted Cauliflower Steak:

  • 1 cauliflower head
  • 1/2 cup curry masala paste (check below for the recipe)
  • 1-2 tablespoons chili powder
  • 3 teaspoons liquid smoke
  • 3 tablespoons gluten-free tamari
  • 2 tablespoons dried thyme
  • 1 teaspoon pink Himalayan salt
  • 2 tablespoons of coconut oil for the pan

For the Masala:

  • 1 large onion
  • 3-4 garlic cloves
  • 4 tablespoons fresh ginger
  • 1/4-1/2 teaspoon Red chili pepper (depending on how hot you want it)
  • 1 tablespoon turmeric
  • 1 tablespoon cumin
  • 3 tablespoons Garam Masala
  • 1 teaspoon ground cloves
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon pink Himalayan salt
  • 1/4 cup soaked and peeled almonds
  • 1 cup fresh cilantro

For the Cashew Cheese:

  • 1 cup soaked cashews
  • 1 teaspoon nutritional yeast
  • 1/4 teaspoon salt
  • 1 lemon squeezed
  • 1/2 cup water

Preparation

  1. Mix all of the masala ingreidents
  2. Oil the pan, wash your cauliflower, and slice it into big chunks.
  3. Add all of the slices to a large bowl and evenly apply all the dry seasonings.
  4. Then add your liquids: the tamari and liquid smoke.
  5. Finally, use a basing brush to apply the curry masala paste. Bake on 400°F for 30 minutes, flipping halfway through.
  6. Blend the cashew cheese ingredients on high.
