Who said tofu and quinoa is boring? A splash of red wine vinegar and a sprinkle of Italian seasonings instantly perk up the flavors in this dish. The bell peppers also add a great crunch to liven up the entrée.

Ingredients You Need for Red Wine Vinegar Tofu With Quinoa [Vegan]

  • 2 tablespoons olive oil
  • 1 teaspoon dried garlic
  • 1 teaspoon Italian seasonings
  • 1 teaspoon dried parsley
  • 3/4 cup red wine vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon crushed black pepper
  • 1 14-ounce package extra-firm tofu, drained and squared
  • 1 cup sliced red onions
  • 1 green bell pepper, sliced round
  • 1 red bell pepper, sliced round
  • 1 yellow bell pepper, sliced round
  • 1/2 cup non-dairy milk
  • 2 1/2 cups cooked quinoa
  • 1/4 teaspoon salt

How to Prepare Red Wine Vinegar Tofu With Quinoa [Vegan]

  1. Heat oil in a nonstick pan and add garlic, Italian seasoning, dried parsley, red wine vinegar, salt, and pepper.
  2. Immediately place each piece of tofu in it. Cover and cook until brown on one side, about 10 minutes. Flip the tofu pieces to the other side and cook covered until brown.
  3. Take out the tofu pieces in a plate and add the onion and bell peppers into the same pan.
  4. Sauté and cook until tender but crunchy.
  5. Add non-dairy milk, salt, and quinoa and sauté well for 1 minute.
  6. In a serving plate, spoon quinoa and vegetables and top it with tofu pieces and serve warm.
