Get ready for the healthiest, cleanest, and maybe the best-tasting sushi you've ever ingested. The "sushi" is comprised of tender quinoa, fresh red cabbage, and crunchy pumpkin seeds all wrapped up in nori. Though this recipe is a simple one, it's exceptionally delicious.

  • 4 sheets nori
  • 1/2 cup quinoa
  • 1 cup water
  • 1 handful pumpkin seeds
  • 1/2 red cabbage
  • 2 tablespoons tamari

How to Prepare Red Cabbage Sushi Burritos [Vegan, Gluten-Free]

  1. Cook the quinoa in boiling water for 15 minutes.
  2. Allow it to cool for 10 minutes (no longer because cold sushi does not work and if the sushi is too hot it will melt the nori).
  3. Once the quinoa has cooled stir in the tamari sauce, red cabbage, and pumpkin seeds.
  4. Lay the nori on a plate.
  5. Put two or three tablespoons of the quinoa mixture on the nori. Once it is mostly rolled, spread some water on the end (this will help it stick) – do this for all the rolls.
  6. Roll, cut and serve.
