Ingredients You Need for Raw Mint Chocolate Cake [Vegan, Gluten-Free]

For the Base:

  • 1 cup raisins
  • 5 pitted dates or 2-3 Medjool dates
  • 2 cups almond meal
  • 2 tablespoon raw cacao powder

For the Lucuma Layer:

  • 1 cup cashews, soaked overnight
  • Juice of 1 lime
  • 1/2 cup agave nectar
  • 1/2 cup melted coconut oil
  • 2 tablespoon lucuma powder

For the Mint Chocolate Layer:

  • 1 cup cashews, soaked overnight
  • Juice of 1 lime
  • 1/2 cup agave nectar
  • 1/2 cup melted coconut oil
  • 4 tablespoon raw cacao powder
  • 1/2 teaspoon peppermint extract

For Decoration:

  • Fresh mint
  • Hemp seeds

How to Prepare Raw Mint Chocolate Cake [Vegan, Gluten-Free]

  1. Blend all base ingredients in a food processor until you have a sticky thick mixture. Press the mixture into a 10-inch silicone mould and place in a freezer.
  2. Blend all lucuma layer ingredients until smooth and creamy. Pour over the base and place in the freezer for at least an hour.
  3. Then, blend all ingredients for the mint chocolate layer until smooth, pour over lucuma layer, and place a cake in the freezer for at least 3 hours or overnight.
  4. Decorate your cake with mint and hemp seeds.
  5. Set cake out 20-30 minutes before serving.
