Ingredients You Need for Raw Lemon, Mango, and Vanilla Tartlets [Vegan]

For the Dough:

  • 5 Medjool dates
  • 7 ounces mulberries
  • 1 tablespoon ground coconut
  • 2 tablespoons superfood powder of choice
  • 1 tablespoon of gluten-free oats
  • 1 pinch of vanilla extract powder

For the Filling:

  • 1 mango
  • 1 lemon
  • 1 1/2 teaspoon of lucuma or ground flax seeds

How to Prepare Raw Lemon, Mango, and Vanilla Tartlets [Vegan]

  1. Pit the dates and put them in the blender bowl with the mulberries and the rest of the ingredients of the dough.
  2. Mix them until you get a dough similar to cookie dough.
  3. Put parchment paper in the bottom of the tart molds.
  4. Spread the dough in the molds using the fingers, moisten them so that it is easier to spread.
  5. Put the dough in the freezer while you prepare the filling.
  6. Wash the lemon and remove the zest.
  7. Collect the flesh from the mango and put it in the blender with the lemon zest and the lucuma and vanilla mixture.
  8. Put the juice and pulp of half the lemon.
  9. Mix for two minutes until the mixture is smooth.
  10. Spread the mango-lemon cream in the tart bottom and place it in a cool place for at least two hours.

  1. This looks yummy. Just two comments: the vanilla seems to be part of the filling, but it\’s listed in the dough. Steps 11 and 12 are a repetition of 9 and 10.
    Cheers
