Ingredients You Need for Raw Chocolate Energy Bars [Vegan, Gluten-Free, Sugar-Free]

Crust:
  • 1/2 cup crushed almonds
  • 1/2 crushed walnuts
  • 1/2 cup raw coconut flakes
  • 4 medjool dates
  • 2 tablespoons coconut oil (measured firm)

Filling:

  • 1 cup cashew nuts (soak 4- 12 hours, drain well)
  • 2 tablespoons quality tahini
  • 2 tablespoons cashew nut butter
  • 2 tablespoons coconut oil (measured firm)
  • 4 tablespoons raw cacao butter
  • 2 tablespoons thick coconut cream
  • 3 tablespoons maple syrup
  • a few tablespoons water if needed

Topping:

  • 2/3 cup raw cacao paste
  • 1/2 cacao butter
  • 4 tablespoons coconut oil
  • 3 tablespoons maple syrup
  • 3/4 cup raw cacao powder
  • 1/2 teaspoon lecithin

How to Prepare Raw Chocolate Energy Bars [Vegan, Gluten-Free, Sugar-Free]

  1. For the crust: Mix everything together and press on the bottom of your moulds.
  2. For the filling: Melt the coconut oil and cacao butter gently in water bath. Blend all the other ingredients until really smooth. Add the oil and butter and blend a bit more, and put the filling on top of the crusts. Place the moulds into fridge to set.
  3. For the topping: Place the cacao butter, cacao paste and coconut oil in water bath. Let melt carefully. Add the other ingredients, stir well and pour the melted chocolate on top of the filling. Put in fridge to firm up.

Notes

You can keep the bars in your refrigerator there is no need to freeze them. They will last good in the fridge for at least a week.
