These raw macarons are a healthy way to nip your sweet cravings in the bud. Cacao powder and almonds come together to create a crunchy chocolate and then sticky Medjool dates, raw cashews, and coconut oil join to create a delicious caramel. Sweet and wholesome!

Ingredients You Need for Raw Chocolate and Caramel Macarons [Vegan]

For the Cookies:

  • 12 Medjool dates, pitted
  • 1 cup raw almonds
  • 4 tablespoons cacao powder
  • A pinch of sea salt

For the Caramel Filling:

  • 4 Medjool dates, pitted
  • 1/4 cup raw cashews
  • 1 teaspoon coconut oil
  • A pinch of sea salt

How to Prepare Raw Chocolate and Caramel Macarons [Vegan]

To Make the Cookies:

  1. Process almonds until ground and slightly sticky. Remove from processor. Then add dates and cacao and process until a paste forms.
  2. Then add back again the ground almonds and process until a sticky paste forms. If it's not sticky enough to form cookies, then add more dates to the processor, one at a time, until it's sticky enough to hold.
  3. Shape dough into cookies with hands or with a cookie cutter.

To make the Caramel Filling:

  1. Process cashews until ground and slightly sticky.
  2. Add in dates and coconut oil and continue processing until a smooth and sticky paste forms.
  3. Spread the caramel between two cookies to make the macarons.

Notes

Store in refrigerator for up to one week.
