How to Prepare Raw Chocolate and Caramel Macarons [Vegan]
To Make the Cookies:
- Process almonds until ground and slightly sticky. Remove from processor. Then add dates and cacao and process until a paste forms.
- Then add back again the ground almonds and process until a sticky paste forms. If it's not sticky enough to form cookies, then add more dates to the processor, one at a time, until it's sticky enough to hold.
- Shape dough into cookies with hands or with a cookie cutter.
To make the Caramel Filling:
- Process cashews until ground and slightly sticky.
- Add in dates and coconut oil and continue processing until a smooth and sticky paste forms.
- Spread the caramel between two cookies to make the macarons.
