This dish is traditional from Portugal and consists basically of potatoes, cabbage and sausage. Not only is it easy and quick, but absolutely delicious. Substitute for your choice of a vegan sausage to add a smoky flavor.

Ingredients You Need for Portuguese Potato, Cabbage, and Sausage Soup [Vegan]

  • 4 potatoes
  • 1 bunch of kale
  • 2 - 4 vegan sausages
  • 3 cups vegetable broth
  • 5 garlic cloves
  • Smoked spiced paprika - to taste
  • Salt to taste
  • 2 tablespoons oil

How to Prepare Portuguese Potato, Cabbage, and Sausage Soup [Vegan]

  1. Chop the fine garlic cloves and fry them with the oil in a medium saucepan. While the garlic is golden, chop the sausage into pieces. Bring to the pan with the paprika and saute for about 5 minutes.
  2. Pour the vegetable stock or water into the pan and bring to a boil. Meanwhile, grate the potatoes in a mandolin (that grater with a blade only, the slices become super thin). Put the potatoes in the pan and adjust the salt. Once the potatoes are cooked, turn off the heat.
  3. Wash and cut the thinly sliced ​​kale. Add to broth only when serving. Ready!!
