How to Prepare Plum Protein Parfait [Vegan]

  1. Preheat oven to 400°F.
  2. Combine oats and flour for the crumble layer in a large bowl and set aside. Using a blender or VitaMix, combine the remaining ingredients -- dates, shredded coconut, coconut oil, soy/almond milk and blend until smooth. Add this mixture to the oat and flour and mix well.
  3. Grease a baking sheet and spread the mixture out flat about 1/4 inch thick - Bake for 12 minutes or until golden brown.
  4. Once it is done TURN OFF oven - break the flat "cookie" apart into small pieces and place back in the oven for a few minutes - creating a granola-like, crunchy topping.
  5. While the crumble is baking, cut plums into bite size pieces and combine in bowl with vanilla and maple syrup -- set aside.
  6. In a small bowl mix the chia pudding ingredients together and set aside to allow it to thicken.
  7. Using a blender or VitaMix, blend the banana and coconut milk forming a creamy texture.
  8. Layer the plum mixture in the bottom of the mason jars, next add the coconut cream, the chia pudding and top with the crumble.
  9. Place in fridge until ready to serve.
