Ingredients You Need for Pistachio, Sea Salt and Carob Chip Cookies [Vegan]

  • 1/2 cup vegan butter, softened
  • 1/2 cup cane sugar
  • 1/2 cup brown sugar
  • 1 flax egg
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup white flour
  • 1/2 cup wheat flour
  • 1/2 cup chopped raw pistachios
  • 1/2 carob chips
  • Sea salt, to sprinkle

How to Prepare Pistachio, Sea Salt and Carob Chip Cookies [Vegan]

  1. Preheat oven to 350 degrees and prep your cookie sheet with parchment paper – set aside.
  2. In large bowl, mix butter and sugar until fluffy. Add vanilla and flaxseed until well combined – about 4 minutes.
  3. Add salt, baking powder, and baking soda – mix well.
  4. Add 1/2 cup of flour at a time to bowl, mixing well after each addition.
  5. Fold in chopped pistachios and carob chips.
  6. Roll dough into 1-inch balls and add to parchment paper. Sprinkle with salt before putting them in oven.
  7. Bake for 10-12 minutes.
  8. Allow to cool before seving

Notes

To make a flax egg: Combine 1 Tbsp ground flaxseeds with 3 Tbsp water. Let sit for 15 minutes and use in place of one egg for baking.
