How to Prepare Pesto Roasted Cauliflower and Potatoes [Vegan]
- Preheat oven to 400°F.
- Coat cubed potatoes in 1 tablespoon oil and a dash of salt. Bake for 55 minutes.
- Coat chopped cauliflower in 1 tablespoon oil and a dash of salt. Bake for 45 minutes at 400°F. You’ll want the tips to burn slightly.
- In a food processor, blend 2 ounces basil, 1/2 cup pine nuts, salt, 1 clove garlic, a dash of onion powder, and 3 tablespoons of oil. Add more oil to make it luxurious. If using nutritional yeast, add it now.
- Allow veggies to cool for a minute or two once done cooking before coating in pesto.




Ah loved this! I was too hungry to wait an hour for it to,roast in the oven. So put cubed potatoes into pan boiling water til nearly done. Drained em and fried in frying pan in oil til crusty. Pt em glass bowl threw cauliflower bits into hot oil and added dash of hot water, putrid on frying pan. Added some tumeric cos I like it. Kept a watch on em, moving around ril they were done crusty. And hey Pesto, two wallops in glass bowl. About 20 mins most.delicious!,, ate with spoon and a fork. Sick to death of salads.
Then went and ruined it all by scoffing a whole tube of Rollos. I can not be trusted.
