Ingredients You Need for Palak Tofu Paneer [Vegan]

For the Tofu:

  • 2 teaspoons oil
  • 9 ounces firm tofu, cubed
  • 1/2 teaspoon black salt or salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garam masala
  • 1 teaspoon onion powder
  • 1/2 teaspoon chili powder

For the Curry:

  • 2 generous cups of fresh baby spinach, firmly packed
  • 1/4 cup coconut cream
  • 1/4 cup water
  • 2 tablespoons cashews
  • 2-3 teaspoons garlic powder
  • 1-2 teaspoons ginger powder
  • 1 teaspoon chili powder
  • 1 medium-sized tomato, diced
  • 1 teaspoon garam masala
  • 1 tablespoon maplesyup
  • 1/2 teaspoon black salt or salt

How to Prepare Palak Tofu Paneer [Vegan]

  1. Add oil in the pan and heat on medium heat. Add cubed tofu and rest of the spices for tofu. Mix to coat the tofu and cook for 10-15 minutes on low–medium heat.
  2. Place all the spinach curry ingredients into a food processor and run until well combined and smooth. Add the curry mixture in the pan with tofu and keep cooking on low- medium heat for 10-15 more minutes. Taste and adjust salt and spices. Serve with rice or bread.
