    • 5 1/4 oz all-purpose flour
    • 2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 1/2 teaspoon baking soda
    • 1 tablespoon white sugar
    • 1/4 teaspoon cinnamon
    • 1/4 teaspoon pumpkin spice
    • 2 tablespoons fancy molasses
    • 1 cup unsweetened soy milk
    • 2 tablespoons canola oil

    How to Prepare Molasses Pancakes [Vegan]

    1. In a large bowl, sift together the flour, baking powder, baking soda, salt, sugar, and spices.
    2. Mix the soy milk with molasses and canola oil.
    3. Make a well in the center and pour in the wet ingredients, mix until combined (don't over mix the batter).
    4. Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1 1/2 tablespoons of batter for each pancake.
    5. Brown on both sides and serve hot with some maple syrup.
