How to Prepare Maple Nut Granola [Vegan]
- Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
- Scoop ¼ cup each of your oats, cashews and pecans into your Vitamix. Blend until you have a fine flour-y texture. Put in a bowl and set aside. Blend the maple syrup, brown sugar, coconut oil, vanilla and sea salt, until smooth. In a large bowl, evenly coat your remaining unblended oats, cashews and pecans with the maple syrup mixture. Addthe blended flour-y mixture and mix until everything is evenly coated. Spread your coated oats and nuts out onto the baking sheet.
- Bake for 30 minutes, or until the granola is golden brown and fragrant. Mix the granola around after 15 minutes so it bakes evenly. This will keep for 2 weeks at room temperature or in the fridge.
