    Ingredients You Need for Maple Nut Granola [Vegan]

    • 2 cups (180 g) gluten-free rolled oats
    • 1 cup (146 g) raw cashews
    • 1 cup (109 g) raw pecans
    • 1/3 cup (80 ml) maple syrup
    • 1/3 cup (73 g) brown sugar
    • 1/4 cup (60 ml) melted refined coconut oil
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon sea salt

    How to Prepare Maple Nut Granola [Vegan]

    1. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
    2. Scoop ¼ cup each of your oats, cashews and pecans into your Vitamix. Blend until you have a fine flour-y texture. Put in a bowl and set aside. Blend the maple syrup, brown sugar, coconut oil, vanilla and sea salt, until smooth. In a large bowl, evenly coat your remaining unblended oats, cashews and pecans with the maple syrup mixture. Addthe blended flour-y mixture and mix until everything is evenly coated. Spread your coated oats and nuts out onto the baking sheet.
    3. Bake for 30 minutes, or until the granola is golden brown and fragrant. Mix the granola around after 15 minutes so it bakes evenly. This will keep for 2 weeks at room temperature or in the fridge.
