Lemon Poppy Seed Baked Oats [Vegan, Gluten-Free]



  • 1/2 cup gluten free oats
  • 1/4 teaspoon baking powder
  • 1 tablespoon poppy seeds
  • 1/2 ripe banana
  • 1/3 cup almond milk
  • juice of one lemon
  • 1 tablespoon maple syrup


  1. Preheat oven to 350°F and prepare a ramekin. In a small mixing bowl, stir together oats, baking powder, poppy seeds, and a pinch of salt.
  2. In another bowl, mash the banana. Then, add milk of choice, maple syrup and lemon juice. Mix until combined
  3. Add dry ingredients to wet ingredients and combine. Pour the mixture into the prepared ramekin and bake for about 25 minutes.
