Lemon Poppy Seed Baked Oats [Vegan, Gluten-Free]
- 1/2 cup gluten free oats
- 1/4 teaspoon baking powder
- 1 tablespoon poppy seeds
- 1/2 ripe banana
- 1/3 cup almond milk
- juice of one lemon
- 1 tablespoon maple syrup
- Preheat oven to 350°F and prepare a ramekin. In a small mixing bowl, stir together oats, baking powder, poppy seeds, and a pinch of salt.
- In another bowl, mash the banana. Then, add milk of choice, maple syrup and lemon juice. Mix until combined
- Add dry ingredients to wet ingredients and combine. Pour the mixture into the prepared ramekin and bake for about 25 minutes.
