In case you're not familiar with it, kimchi is an awesome Korean food staple made from fermenting cabbage. The tangy flavor of kimchi coupled with the creaminess of chickpeas makes an amazing dip you will find yourself using for all sorts of things from perking up sandwiches to dipping veggies and chips.
Kimchi Hummus [Vegan, Gluten-Free]
- 1/2 of 1 14-ounce can of chickpeas
- 1 cup vegan kimchi
- 1 scallion
- 2 tablespoons tahini
- 3 tablespoons kimchi liquid
- Add everything to a food processor or high-speed blender and pulse, while scrapping down the sides every now and then, until you get a nice smooth consistency.
