Ingredients

  • 2 cans green jackfruit, drained
  • 1 can pumpkin puree
  • 1 can diced tomatoes
  • 1 cup white onion, chopped small
  • 2 cloves garlic, crushed
  • 1/2 cup dark brown sugar
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon pumpkin pie spice
  • 1 cup black beans
  • 1/2 cup white beans

Preparation

  1. Add jackfruit, pumpkin and tomatoes to the bowl of a slow cooker
  2. Stir in onions and garlic
  3. In a small bowl mix together brown sugar, sea salt, cumin, chili powder and pumpkin pie spice
  4. Add spice mixture to slow cooker, mix until fully incorporated
  5. Cook on high for 6 hours
  6. Using a fork, shred jackfruit
  7. Mix in black and white beans
  8. Serve over rice, grains or with corn bread
