How to Prepare Homemade White Chocolate Peanut Butter and Jam Cups [Vegan]
- Make the chia jam by placing the strawberries in a saucepan over medium heat and simmer for about 10 minutes until it bubbles and breaks down. Mash the fruit until desired consistency. Remove from the heat and add the chia seeds. Add maple syrup and stir until well combined and let it rest for at least 15 minutes
- Melt the white chocolate in a bowl over a saucepan full of boiling water
- Set muffin cases out in a muffin tray and spoon 3/4 tbsp of melted chocolate into the bottom of each one. Place in the fridge to set.
- Once set add a teaspoon of peanut butter on top of the chocolate layer
- Add half a teaspoon of jam to the top of the peanut butter and used the spoon to flatten it and spread it across the top
- Evenly distribute the remaining chocolate over the top and place in the fridge to set.
