    Holiday Stollen [Vegan]

    This is a Christmas bread called stollen, a confection filled with dried fruits like raisins. The traditional stollen recipes use yeast, this version of the stollen uses baking powder instead. It really tastes so delicious and is made very quickly and without yeast.

    Ingredients You Need for Holiday Stollen [Vegan]

    • 1/2 cup plant-based butter
    • 3/8 cups cane sugar
    • 2/3 cup Plain Soy Yogurt
    • 2 2/3 cups spelt flour
    • 1 teaspoon cinnamon
    • 1/2 package baking powder
    • 1/2 cup almonds, chopped
    • 1 cups raisins
    • Rum
    • orange peel
    • 1 cup icing sugar
    • 1/2 cup plant-based butter

    How to Prepare Holiday Stollen [Vegan]

    1. Preheat oven to 350°F top/bottom heat.
    2. Line two baking sheet´s with baking parchment paper.
    3. Mix flour with baking powder and cinnamon, put aside.
    4. Stir the butter with the sugar, add the plain soy yogurt and the orange peel.
    5. Add the prepared flour mixture, stir in briefly, then add almonds and raisins.
    6. Add rum until you get a firm dough.
    7. Shape dough into walnut sized balls.
    8. Place on the prepared trays. If you have a large oven, you can bake both baking trays at once.
    9. Bake for about 10-15 minutes.
    10. Melt the butter in a small saucepan.
    11. Coat the Stollen confectionery with warm butter and sprinkle with icing sugar (or roll in it).
    12. Leave to stand for at least one day in a tightly closed can.
