Guru Salad [Vegan]

Finely sliced Kale with Red Cabbage mixed with Walnuts & Pomegranate. This salad is amazing-so perfect for summer!

Ingredients You Need for Guru Salad [Vegan]

For the Salad:

  • 1 large head of kale
  • 1/4 red cabbage
  • 1/2 red onion
  • 1/2 cup pomegranate seeds
  • 1/2 cup walnuts
  • Himalayan pink salt to taste

For the Dressing:

  • 1/4 Apple Cider Vinegar or Lemon Juice or good quality Balsamic Vinegar
  • 1/4 cup Avocado Oil or Olive oil
  • 1/4 cup Maple syrup
  • 2 teaspoon minced dehydrated garlic or freeze-dried garlic powder

How to Prepare Guru Salad [Vegan]

  1. Wash the kale leaves thoroughly and cut the middle stems
  2. Finely slice each leaf and place it into a large bowl.
  3. If you have a whole cabbage, cut the bottom off, remove some of the top leaves and wash thoroughly.
  4. Cut into half and cut the one half I to half again, so you get the quarter of cabbage.
  5. You may slice it finely as possible with a knife, or you can use slicer.
  6. When ready, mix with the kale in the bowl.
  7. Slice an onion and mix with the rest of the ingredients in the bowl.
  8. Pour all of the dressing ingredients in a bottle or jar with a lid and mix. Shake well before applying..
  9. Mix well and adjust the taste.
  10. Top with pomegranate and walnuts before serving.
