Gluten-Free Berry Pie With Juicy Filling [Vegan, Gluten-Free, Paleo]

Cooking Time




For the Crust:

  • 1/2 cup gluten free all purpose flour
  • 1/2 cup almond flour
  • 1 tablespoon chia seeds
  • pinch of salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla bean powder
  • 1/3 teaspoon xanthan
  • 1/2 teaspoon cardamom
  • 1/4 cup coconut sugar
  • 1/4 cup coconut oil
  • 1/4 cup high fat coconut cream

For the Filling:

  • 2 cup mixed berries used blueberries, raspberries and blackberries.
  • 1 1/2 tablespoons potato or tapioca starch
  • 1 1/2 tablespoons coconut sugar
  • 1/4 teaspoon cinnamon powder


For the Crust:

  1. Mix everything together into a batter.
  2. Press in an oiled  baking tin. I used a teflon coated baking tray so a little bit of coconut oil  did the job well.

For the Filling:

  1. Mix everything together carefully and pour on top of  the dough.
  2. Bake in 350°F for 40 minutes.
