Instead of rice, this raw dessert sushi starts with a sweet mixture of blended banana, Brazil nuts, and coconut. The "sushi rice" bases are then wrapped in nori and topped with fresh fruit to create an adorably creative dessert. Serve these on a platter with a drizzle of fruit syrup, plus a little extra on the side for dipping.

Preparation

  1. Blend the banana, nuts, shredded coconut, lime juice, vanilla, and cinnamon in a blender until combined. This is your "sushi rice." Chill the mixture in refrigerator for 20-30 minutes.
  2. Remove the "sushi rice" from the refrigerator and, with your hands, shape it into the desired shapes.
  3. Cut the nori into strips, then, with damp hands, moisten the nori. Wrap it around the sushi rice.
  4. Slice the fruit and arrange it on top of the dessert sushi to your liking.
