On their own, figs have a uniquely sweet taste and a delicate, soft texture that is really addictive. But sliced into thick rounds and drowned in vanilla custard? That’s a one-way ticket to dessert heaven. You’ll immediately fall in love with this secretly healthy fig and custard tart!

Ingredients You Need for Fancy Fig Custard Tart [Vegan, Gluten-Free]

Crust:
  • 3/4 cup ground almonds
  • 3/4 cup ground oats (you can just grind a heaping 3/4 cup of oats in a coffee grinder or a food processor)
  • 1/2 cup oat bran (or more ground oats)
  • 4-5 tablespoons maple or date syrup
  • Optional: 1/4 teaspoon cardamom
Custard:
  • 1/2 cup plain soy yogurt (or other plain non-dairy yogurt of choice)
  • 1 1/2 cup soy milk (or other milk of choice but coconut milk might alter the flavor a bit)
  • 1/2 cup unrefined sugar, erythritol or xylitol (I used 1/2 cup erythritol and 1/4 cup unrefined sugar, but you can make it completely sugar-free if you like)
  • 1 teaspoon vanilla extract
  • 1/4 cup cornstarch (or arrowroot powder)
  • Optional: 1/4 teaspoon turmeric (naturally colors the custard into a nice yellow)
  • 1/8 teaspoon black salt (kala namak)
  • 4 medium fresh figs

How to Prepare Fancy Fig Custard Tart [Vegan, Gluten-Free]

  1. Combine all custard ingredients except for the black salt in a saucepan. Whisk until smooth and thoroughly combined.
  2. Bring to a boil over medium heat, stirring or whisking constantly.
  3. Boil for a minute or two, still stirring, until thickened into a pudding-like consistency.
  4. Turn off the heat and set aside.
  5. Preheat the oven to 350°F and line a 10-inch springform pan with parchment (or grease it if you prefer).
  6. Combine the crust ingredients and pour into the pan.
  7. Press in evenly with the back of a spoon (dip it in cold water if the mixture sticks to it too much).
  8. Pour the custard over the crust and spread evenly. Be careful not to mix it with the crust ingredients.
  9. Slice the figs into 1/3 to 1/2-inch rounds and place the slices next to each other in the custard layer.
  10. Bake until the custard firms up and figs caramelize slightly, about 35 minutes.
  11. Let cool completely before slicing.
  12. Serve as is or sprinkle with powdered sugar.

Notes

If you forget to stir the custard for a bit while it's cooking and end up with some lumps, you can fix this by simply blending the custard with a regular or an immersion blender. You should be able to make this in a regular pie pan of similar size, but it will be a bit more difficult to get the tart out of the pan. A springform pan will make your life a lot easier.
