Easy Chocolate Chip Peanut Butter Cookies [Vegan]

  • 2 tablespoons almond milk
  • 2 flax eggs
  • 1/2 cup coconut sugar
  • 2 tablespoons coconut oil softened
  • 1/2 cup peanut butter
  • 1/2 cup coconut flour
  • 1 teaspoon baking soda
  • 3/4 cup dairy-free dark chocolate chips


  1. Preheat oven to 350°F.
  2. Mix all the wet ingredients together in a large bowl
  3. Then add dry ingredients (minus the chocolate chunks) in till combined
  4. Fold in the chocolate chips
  5. Take a bit of each dough and form a cookie on a baking tray prepared with parchment paper. To help the cookies to spread, push them down with the back of your spatula, or fork, right before baking
  6. Bake for 12 minutes
  7. Leave to cool completely before enjoying
