  • Potatoes (as many as you like)
  • Herbs and spices of choice
  • A drizzle of oil
  • Salt and pepper

How to Prepare Duchess Potatoes [Vegan, Gluten-Free]

  1. Preheat oven to 400°F.
  2. Boil potatoes. Drain well and mash completely. No lumps, or they’ll clog the piping bag.
  3. Grease a cookie sheet. Spoon the creamy mashed potatoes into your piping bag, then pipe onto cookie sheet. Try to build a solid stack. If it’s hollow like an upside down cone, then they’ll spread out more while baking.
  4. Drizzle oil over the piped potatoes. Sprinkle with salt.
  5. Bake for about 30 minutes, until they start to turn gold around the edges.
