How to Prepare Dirty Fries [Vegan]

For the Fries

  1. Pre-heat the oven to 360°F
  2. Cut the potatoes into fries shapes (however thick you wish) then add into an oven tray along with the other ingredients, and ensure the potatoes are covered
  3. Place in the oven for about 30-40 minutes until crisp, make sure you move them around every 10 minutes

For the Seitan Chicken

  1. Combine all the seitan chicken ingredients (except the water) in a bowl a mix until combined, then add the water and knead until a dough-type mixture is formed
  2. Roll the dough into a ball then roll in some foil until covered and twist the ends to seal – then place the seitan in a steamer for 40 minutes (make sure you turn it over half way through)
  3. After 40 minutes, let the seitan cool for a couple of minutes, then cut it into small chunks (ready for frying)
  4. Heat the oil in a pan, then sprinkle in the 1 teaspoon of smoke paprika and add the seitan and stir until covered – then fry for about 4/5 minutes until it’s all crisped

For the Cheese Sauce

  1. Boil the potatoes and carrot in water until soft (~10-15 minutes)
  2. Then add to a food processor and blend with the rest of the ingredients until smooth and a sauce forms
