Ingredients

Potatoes

  • 5 large potatoes, peeled
  • 1/4 teaspoon baking soda
  • 4 cups water
  • 3 tablespoons olive oil
  • 1 sprig rosemary, chopped
  • 2 cloves of garlic, diced or pressed
  • Salt, pepper
  • Fresh parsley

Mayonnaise

  • 1 teaspoon dijon mustard
  • 3 tablespoons unsweetened non dairy milk
  • 1/2 cup rapeseed oil
  • Salt to taste
  • Pepper to taste

Preparation

  1. Preheat the oven to 390°F
  2. Boil the water with the potatoes, a little salt and baking soda
  3. Bring to simmer for about 10 minutes
  4. In the meantime fry the garlic and rosemary in the olive oil
  5. Strain the oil through a fine mesh sieve in a large bowl
  6. Put the garlic / rosemary mixture aside
  7. The potatoes then mix in the bowl with the oil
  8. Season with salt and pepper
  9. Spread the potato on a baking sheet
  10. Bake for about 20 minutes, then turn over and bake again for 20 minutes until the potatoes are golden brown
  11. Place the potatoes in a large bowl and add the garlic / rosemary mixture and mix
  12. Serve with chopped parsley
  13. For the mayo, blend all the ingredients for about 30 seconds. While blending, slowly add in the oil until emulsified thick.
