How to Prepare Crispy Spicy Potatoes with Homemade Mayonnaise [Vegan]
- Preheat the oven to 390°F
- Boil the water with the potatoes, a little salt and baking soda
- Bring to simmer for about 10 minutes
- In the meantime fry the garlic and rosemary in the olive oil
- Strain the oil through a fine mesh sieve in a large bowl
- Put the garlic / rosemary mixture aside
- The potatoes then mix in the bowl with the oil
- Season with salt and pepper
- Spread the potato on a baking sheet
- Bake for about 20 minutes, then turn over and bake again for 20 minutes until the potatoes are golden brown
- Place the potatoes in a large bowl and add the garlic / rosemary mixture and mix
- Serve with chopped parsley
- For the mayo, blend all the ingredients for about 30 seconds. While blending, slowly add in the oil until emulsified thick.
