    Creamed Greens [Vegan]

    This simple recipe is a great use for cashew white sauce and a wonderful side dish highlighting nutrient-dense dark greens.

    Ingredients You Need for Creamed Greens [Vegan]

    • 4 cups dark greens of choice, stemmed and ripped or chopped
    • 1/2 cup vegetable stock
    • 1/2 cup of Basic White Sauce
    • pinch of freshly ground black pepper
    • flaked sea salt for finishing (optional)

    How to Prepare Creamed Greens [Vegan]

    For the Cashew White Sauce:

    1. In a medium bowl, soak the cashews in water for 3 to 4 hours to soften. Strain, reserving the cashews and discarding the liquid.
    2. First, gather and prepare your mise en place.
    3. If choosing to use oil:
      1. Heat the pan to low to medium heat and add the olive oil. Add the onions and sweat for at least 5-8 minutes to bring out the flavor until translucent. Continue by then adding the garlic and sweat for an additional couple minutes.
    4. For no oil sauté:
      1. Heat the pan to medium to high heat. Be sure the pan is heated properly (water test). Add the onions to the dry pan and continue to stir well until the onions begin to turn translucent and stick. Try to keep the onions from browning, adding a little stock or water if needed. You can add the garlic to the onions or add directly into the blender as shown in the video. Remove from heat.
      2. Transfer the cooked onions and garlic into the blender.
    5. To finish the sauce, add the cashews, the remaining vegetable stock, white wine, garlic, nutritional yeast, onion granules, nutmeg, white pepper and salt (if using). Blend on high speed until smooth. Add more liquid if you choose to have a thinner consistency.

    For the Creamed Greens:

    1. First, gather and prepare your mise en place.
    2. To prepare the dish, bring a fry pan to medium heat. Add the dark greens and sauté for a few minutes, stirring frequently. Add the vegetable stock and continue to stir the greens as they begin to steam. Add the Cashew White Sauce and combine to coat the greens well.
    3. When the greens are wilted and the white sauce has thickened remove from heat.
    4. Serve as a side dish or over brown rice for a nice light meal.

    Notes

    This sauce will reduce and continue to thicken when used in other recipes. If you are unable to use cashews, consider tofu, white beans, or another nut or seed, such as sunflower seeds.
