    Ingredients You Need for Cinnamon Swirl Healthy Muffins [Vegan, Gluten Free]

    For the Muffins:

    • 1 1/2 cup oat flour (use gluten free oats)
    • 1/4 cup coconut sugar
    • 1 teaspoon cinnamon
    • 2 teaspoons baking powder
    • 3/4 cup almond milk
    • 1/2 banana mashed
    • 1/2 cup vegan butter melted
    • 1 teaspoon vanilla extract

    For the Topping:

    • 1/4 cup soft vegan butter
    • 1/4 cup coconut sugar
    • 1/4-1/2 cup oat flour ( use gluten free oats)
    • 1 teaspoon cinnamon

    For the Glaze:

    • 2 tablespoons soft vegan butter
    • 1 cup powdered sugar
    • 1 tsp vanilla extract
    • splash of almond milk

    How to Prepare Cinnamon Swirl Healthy Muffins [Vegan, Gluten Free]

    1. Preheat oven to 350F/175C. Prepare a muffin pan and set aside.
    2. Mix dry ingredients together in a bowl. Mix the wet ingredients in a separate bowl, then combine the two mixture. Make crumble topping by combing all ingredients with a fork.
    3. Place the batter into the muffin pan add the crumble topping then swirl in with a toothpick.
    4. Bake for about 17 minutes until golden brown.
    5. While muffins are baking, make glaze by combing all the ingredients. If you want it runny, just add more almond milk, if you like it thick, add less almond milk.
    6. Let the muffins cool completely before glazing.
