Cinnamon Roll Breakfast Bars [Vegan, Gluten-Free]



Cooking Time




For the bars:

  • 2 cups gluten-free oat flour
  • 1 tablespoon cinnamon
  • 2 teaspoons baking powder
  • 1 tablespoon flaxseed + 3 tablespoons water
  • 1/4 cup coconut oil, soft
  • 1/4 cup applesauce
  • 1/4 cup maple syrup
  • 1/2 teaspoon vanilla extract

For the Frosting:

  • 8 ounces vegan cream cheese
  • 1/4 cup maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract


  1. Preheat oven to 350ºF. Line a 8x8 baking dish with parchment paper.
  2. In a bowl, mix together the flaxseed and water, coconut oil, applesauce, maple syrup and vanilla extract. Add the oat flour, cinnamon and baking powder and stir until combined.
  3. Pour batter into prepared baking dish. Bake for 15-20 minutes or until toothpick comes out clean.
  4. While bars are baking, beat together frosting ingredients. Taste and adjust sweetness, as needed.
  5. Once bars have cooled, frost completely. Slice into 10-12 squares and serve!
