Chunky healthy vegan oat cookies.....which are packed with nutrient-dense ingredients. Not only do they make a great snack but you could even have them for breakfast! As well as being vegan, these cookies are also gluten-free, refined sugar-free, and are packed with healthy fats!

Chunky Vegan Oat Cookies [Vegan, Gluten-Free]



Cooking Time




  • 3.5 ounces Rolled or Jumbo oats
  • 1.2 ounces Desiccated coconut
  • 1.2 ounces Ground almonds
  • .5 ounces chopped walnuts
  • 1 tablespoon Chia seeds
  • 1 teaspoon Ground ginger
  • 2 teaspoon Cinnamon
  • Pinch of sea salt
  • 2.8 ounces Coconut oil, melted
  • 2.2 ounces Maple syrup
  • 2.2 ounces Dairy-free milk
  • 2 teaspoons Vanilla extract
  • A few toffee drops (optional)


  1. Preheat an oven to 338°F and line a baking tray with parchment paper
  2. Add all of the wet ingredients to a bowl and mix until well combined
  3. Add to this bowl all of the dry ingredients and mix together
  4. Leave the mixture for 20 minutes to allow the chia seeds to soak up some of the moisture and form a cookie batter
  5. After 20 minutes, using wet hands, scoop up 6 even sized balls onto the baking tray and flatten into disc shapes with the palm of your hand, smoothing around the edges with your fingers
  6. Place in the preheated oven for 18 minutes or until golden brown
  7. Remove from the oven and allow to cool completely. The cookies will harden as they cool but should still be soft and chewy
