  • 2 ripe bananas
  • 3 tablespoons chia seeds
  • 1 cup whole raw almonds
  • 1 1/2 cups walnut halves
  • 1 cup brown rice flour
  • 1/2 cup maple syrup
  • 2 tablespoons vanilla extract
  • 1/2 cup coconut milk
  • 1/2 cup vegan unsweetened chocolate chips
  • 1 teaspoon baking soda

How to Prepare Chocolate Chip Panettone: Italian Christmas Bread [Vegan, Gluten-Free]

  1. Preheat oven to 320°F.
  2. Mash bananas with a fork and mix with chia seeds, vanilla extract, maple syrup, and coconut milk. Set aside so the chia seeds for a gel.
  3. Meanwhile, process all almonds and 1 cup of walnuts in a food processor or blender until a flour-like consistency (avoid forming a paste).
  4. Transfer to a large bowl. Chop the remaining 1/2 cup of walnuts into smaller pieces and place them in the bowl with the nut flours. Then, add to the same bowl the brown rice flour, baking soda, and chocolate chips. Mix well.
  5. Pour the wet mixture into the dry ingredient mixture and mix well.
  6. Grease a small springform pan with a little coconut oil and pour the batter inside, spreading evenly.
  7. Bake for one hour, let cool and then remove from pan.
