Chocolate Cake [Vegan]

We were messing around to create a kid-friendly vegan cake and result was a delicious cake with layers of an irresistible chocolate cream. Both the cake and the cream are quite adaptable and can even be used in other recipes. You must give it a shot!

Ingredients You Need for Chocolate Cake [Vegan]

Cake

  • 1 cup non dairy milk
  • 1 tablespoon vinegar
  • 1 cup white spelt flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 teaspoon yeast for cakes
  • 1/2 cup coconut sugar
  • 1/4 cup sunflower oil (good quality)
  • 1 teaspoon vanilla

Cream

  • 3/4 cup of coconut cream
  • 1 cup of chocolate
  • 1/4 cup coconut sugar
  • 1/2 teaspoon vanilla

How to Prepare Chocolate Cake [Vegan]

Cake

  1. Turn on the oven at 360ºF.
  2. In a bowl, combine the milk with the vinegar and let it rest 10 minutes.
  3. In another bowl mix the sifted flour, baking powder and baking soda.
  4. In another bowl beat the oil with the sugar.
  5. Add the flour mixture, alternating with the milk mixture. Do not beat too much. Put it in a lined form with parchment paper and barred with coconut oil.
  6. Bake for 25-30 minutes.
  7. Remove, let cool and then remove.

Cream

  1. Melt everything in a water bath until all the ingredients blend well.
  2. Place in a bowl and bring to refrigerator until firm, but so that when touching in the middle, the cream yields slightly.
  3. At this point, remove from the refrigerator and leave at room temperature for 15 minutes.
  4. Beat with the mixer to get a fluffy cream.
  5. Layer on cake and enjoy!
