For the Blondies:

  • 1 15-ounce can chickpeas
  • 1 cup unsweetened almond milk
  • 1 cup chickpea flour
  • 1/2 cup date paste (8 dates blended with 1/2 cup hot water)
  • 1/2 cup unsweetened applesauce
  • 1 tablespoon cinnamon

For the Cinnamon Swirl:

  • 1/2 cup date paste (8 dates blended with 1/2 cup hot water)
  • 1 tablespoon cinnamon

How to Prepare Chewy Cinnamon Roll Blondies [Vegan, Gluten-Free]

  1. Preheat the oven to 350°F.
  2. Blend the canned chickpeas with almond milk until totally smooth. Make the date paste (just combine the ingredients for the paste in the blondies and the cinnamon).
  3. Combine chickpeas and almond milk with the chickpea flour, date paste, applesauce, and cinnamon and stir until combined. Spread the blondie batter into a non-stick square pan.
  4. Mix the date paste and cinnamon, and using a toothpick or knife, gently drop into blondie batter and swirl throughout. Bake the blondies for 40 minutes.
