For the Blondies:
- 1 15-ounce can chickpeas
- 1 cup unsweetened almond milk
- 1 cup chickpea flour
- 1/2 cup date paste (8 dates blended with 1/2 cup hot water)
- 1/2 cup unsweetened applesauce
- 1 tablespoon cinnamon
For the Cinnamon Swirl:
- 1/2 cup date paste (8 dates blended with 1/2 cup hot water)
- 1 tablespoon cinnamon
Preparation
- Preheat the oven to 350°F.
- Blend the canned chickpeas with almond milk until totally smooth. Make the date paste (just combine the ingredients for the paste in the blondies and the cinnamon).
- Combine chickpeas and almond milk with the chickpea flour, date paste, applesauce, and cinnamon and stir until combined. Spread the blondie batter into a non-stick square pan.
- Mix the date paste and cinnamon, and using a toothpick or knife, gently drop into blondie batter and swirl throughout. Bake the blondies for 40 minutes.
