Couscous is already exciting, but cauliflower couscous – it's almost too much to handle. This dish is incredibly simple but it looks good enough to be served at a fancy restaurant. Plus, it's all vegetables so it's light and healthy to boot.

Cauliflower Couscous With Sun-Dried Tomato Sauce [Vegan, Gluten-Free]



For the Couscous:

  • 1/2 cauliflower
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 1/2 yellow pepper
  • A few radishes
  • Dill, to garnish

For the Tomato Sauce:

  • 8-10 sun-dried tomatoes
  • 1/2 avocado
  • 4 small garlic cloves
  • A few cherry tomatoes
  • 1 tablespoon maple syrup
  • Oregano, to taste
  • Basil, to taste
  • Salt, to taste
  • Pepper, to taste
  • Water, as needed


  1. Put the cauliflower in the food processor and blend. Be sure that it is still in separate pieces, you do not want a paste.
  2. Dice the peppers, radishes, and dill and add them in a bowl to the cauliflower. Set this aside
  3. Add all of the sauce ingredients to the food processor.
  4. Blend them together until smooth. If your sauce is too thick, add a little water.
  5. Mold the cauliflower in muffin tins and serve the dish chilled with the sauce.
