Ingredients You Need for Build-Your-Own Bagel Sandwich Board [Vegan]

For the Board:
  • 6 bagels, sliced in half
  • 1 batch Roasted Beet Hummus
  • 1 (8-ounce [227 g]) container plain vegan cream cheese
  • 1 (8-ounce [227 g]) container scallion vegan cream cheese
  • 1 scallion, finely chopped
  • 1 (7-ounce [196 g]) bag fresh arugula
  • 1 large cucumber, sliced
  • 2 large tomatoes, sliced
  • 1/2 red onion, sliced into rounds
  • 2 avocados, peeled, pitted, and sliced
  • 3 ounces (84 g) alfalfa sprouts
  • 2 tablespoons (30 ml) hot sauce
  • 1/4 cup (56 g) vegan butter
  • 1/4 cup (30 g) everything bagel seasoning
  • 3 small oranges

For the Roasted Beet Hummus:

  • 1 large beet, roasted, peeled, and chopped
  • 1 (15-ounce [420 g]) can chickpeas, drained and rinsed
  • 3 tablespoons (45 ml) lemon juice
  • 1 clove garlic, roughly chopped
  • 2 tablespoons (30 g) tahini
  • 3/4 teaspoon salt
  • 1/4 cup (60 ml) olive oil, plus more for drizzling
  • 1 teaspoon everything bagel seasoning, for topping (optional)


How to Prepare Build-Your-Own Bagel Sandwich Board [Vegan]

For the Board:
  1. Toast the bagels and arrange them down the center of your board.
  2. Scoop the Roasted Beet Hummus, plain vegan cream cheese, and scallion vegan cream cheese into bowls of similar size and set them across the board. Sprinkle the chopped scallion on top of the scallion cream cheese.
  3. Place clumps of arugula in five or six different places on the board.
  4. Fan the cucumber slices near the vegan cream cheese.
  5. Layer the tomato slices on the board.
  6. Pile the sliced red onion on top of the arugula.
  7. Divide the avocado slices into clusters and set them on the board.
  8. Add a large pile of alfalfa sprouts to the board, overlapping the arugula.
  9. Pour the hot sauce into a mini bowl and set it on the board.
  10. Transfer the vegan butter and everything bagel seasoning to mini bowls and set them on the board.
  11. Slice the oranges in half and place them across the board.

For the Roasted Beet Hummus:

  1. Place the beet, chickpeas, lemon juice, garlic, tahini, and salt in a food processor and turn it on. As the food processor runs, drizzle in the olive oil from the top.
  2. Scoop the hummus into a bowl, cover, and refrigerate until ready to serve.
  3. Just before serving, stir the hummus and add a swirl of olive oil to the top. Sprinkle with the everything bagel seasoning, if desired, and serve on the Build-Your-Own Bagel Sandwich Board.
