When you're craving the rich, bold flavor of a beefy patty, this soy-based BBQ burger is what you need. The patty is smoky from BBQ seasoning and tabasco and is then topped with fried eggplant bacon and a decadent cashew cheese sauce. BBQ Burger With Eggplant Bacon and Cashew Cheese [Vegan]

For the Burger:

  • 2 1/2 cups frozen soy mince
  • 1 onion, finely chopped
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika powder
  • 1 teaspoon BBQ seasoning
  • 1 teaspoon Tabasco sauce
  • 1 teaspoon minced garlic
  • 3/4 teaspoon salt
  • 1/2 cup chickpea flour

For the Eggplant Bacon:

  • Eggplant
  • Smoked paprika powder
  • Garlic powder
  • BBQ seasoning
  • Salt

For the Cashew Cheese:

  • 3/4 cup cashew nuts
  • 1/2 cup water
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1 teaspoon extra virgin olive oil
  • 2 tablespoons nutritional yeast

For the Burgers:

  • Ketchup
  • 2 hamburger buns
  • Tomato
  • Mixed greens of your choice


  1. Chop up an onion finely and fry in some oil together with the soy mince. Add all other ingredients apart from the gram flour and cook for about 5-10 minutes.
  2. Then put the mixture into a bowl and add a 1/2 cup of chickpea flour to it. Mix together well until you get a sticky batter-like mixture. Form patties (they shouldn't be too thick, otherwise the inside doesn't cook properly) and fry in a griddle pan until the are browned on both sides.
  3. Take the eggplant and cut it into thin bacon-size slices. Season the slices on both sides with smoked paprika powder, BBQ seasoning, garlic powder, and salt and fry in oil until they are slightly crisp (unfortunately you will need quite a bit of oil). When done put them on a sheet of kitchen towel to get rid of some of the oil.
  4. To make the cashew cheese, put all cashew cheese ingredients into a smoothie blender and blend until you get a nice smooth cheese sauce.
  5. To assemble the burgers, add mixed greens of your choice to the bottom bun, then the meaty patties, ketchup, followed by the eggplant bacon, the cashew cheese sauce, and a few sliced tomatoes on top. Serve.
