This vegan Banana Loaf is a winner. The secret is to have very very ripe bananas as this makes the bread naturally sweet and dense, which is what you want in a banana loaf. Makes it easy to toast and can be frozen to eat later!

Cooking Time



  • 4 very ripe mashed bananas
  • 1/3 cup almond milk
  • 2 Tablespoons flax meal
  • 2 Tablespoons sunflower oil
  • 2 Tablespoons maple syrup
  • 1 teaspoon vanilla essence
  • 1/3 cup brown sugar
  • 1&1/2 cups plain flour
  • 1 teaspoon bicarbonate Soda


  1. Preheat the oven to 350ºF – prepare your loaf tin.
  2. Mash the banana and mix with the wet ingredients. Add your dry ingredients and mix until just combined (don’t over mix this).
  3. Bake for 35-40 minutes.
  4. Cool, slice and enjoy!
