Apple Cinnamon Pancakes [Vegan, Gluten-Free]

Ingredients
For the Pancakes:
- 2 cups buckwheat flour
- 2 Tablespoons coconut sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1 Tablespoon baking powder
- 2 cups non-dairy milk
- 1 teaspoon pure vanilla extract
- 1 Tablespoon coconut oil melted
- 1 apple grated
For the Apple Topping:
- 1 apple
- 1 tablespoon coconut oil
- 1 tablespoon maple syrup
- 1 tablespoon cinnamon
Preparation
For the Apple Topping:
- Heat a medium saucepan to medium heat and cook all the topping ingredients until apples have softened to your liking, about 5-10 minutes. Let cool slightly.
For the Pancakes:
- Heat a pan over medium-high heat.
- In a large bowl add the dry ingredients and mix together
- Add the wet ingredients and whisk until the batter is just combined. Don’t over mix, lumps are OK!
- Brush a bit of oil on the pan and pour about 1/4 cup of batter
- Flip the pancake once the edges appear slightly cooked and small bubbles form on top. Cook on the other side until lightly browned.
- Serve immediately with the apple topping
