Apple Cinnamon Pancakes [Vegan, Gluten-Free]

For the Pancakes:

  • 2 cups buckwheat flour
  • 2 Tablespoons coconut sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 Tablespoon baking powder
  • 2 cups non-dairy milk
  • 1 teaspoon pure vanilla extract
  • 1 Tablespoon coconut oil melted
  • 1 apple grated

For the Apple Topping:

  • 1 apple
  • 1 tablespoon coconut oil
  • 1 tablespoon maple syrup
  • 1 tablespoon cinnamon


For the Apple Topping:

  1. Heat a medium saucepan to medium heat and cook all the topping ingredients until apples have softened to your liking, about 5-10 minutes. Let cool slightly.

For the Pancakes:

  1. Heat a pan over medium-high heat.
  2. In a large bowl add the dry ingredients and mix together
  3. Add the wet ingredients and whisk until the batter is just combined. Don’t over mix, lumps are OK!
  4. Brush a bit of oil on the pan and pour about 1/4 cup of batter
  5. Flip the pancake once the edges appear slightly cooked and small bubbles form on top. Cook on the other side until lightly browned.
  6. Serve immediately with the apple topping
